Canned Spiced Pears

Ingredients:

  • 10 pounds of firm, ripe pears
  • 4 cups of water
  • 2 cups of granulated sugar
  • 1 tablespoon of lemon juice
  • 4 cinnamon sticks
  • 1 tablespoon of whole cloves

Instructions:

  1. Wash and peel the pears, then core and slice them into desired shape.
  2. In a large pot, combine the water, sugar, lemon juice, cinnamon sticks, and cloves. Bring the mixture to a boil, stirring until the sugar dissolves.
  3. Add the sliced pears to the pot and simmer for about 10 minutes, until they are tender but still firm.
  4. Using a slotted spoon, transfer the pears to sterilized canning jars, leaving about 1/2 inch of headspace.
  5. Bring the remaining liquid in the pot to a boil and cook for an additional 5 minutes.
  6. Pour the hot liquid over the pears, leaving 1/2 inch of headspace.
  7. Remove any air bubbles by running a non-metallic spatula along the inside of the jars.
  8. Wipe the jar rims with a clean, damp cloth and place the lids and bands on the jars.
  9. Process the jars in a water bath canner for 20 minutes (adjusting for altitude if necessary).
  10. Remove the jars from the canner and let them cool completely before storing in a cool, dark place.
